At Joseph's Organic Bakery, our Premium Olive Oil and our Olive leaf tea are produced from Ancient Heirloom trees 300-1000 years old. Situated in the hills surrounding an old Spanish farming village, our olive orchards have been cultivated for generations on a Family Farm.
Our olives are carefully handpicked from certified organic, ancient heirloom trees on our generational farm. Our ancient trees are strong and nutrient rich due to ancient farming techniques that safeguard the soil, producing high polyphenol olive oil and extremely potent (anti-inflammatory, anti-viral antibacterial) olive leaf tea.

What Makes our Olive Oil Unique:
• Heirloom Trees (Never Cloned)– Most olive trees are almost always cloned trees. Primary reason: Cloned trees produce olive fruit much faster (3-5 years) than seeded trees (8-12 years). In contrast, Our trees are 300-1000 years old, planted hundreds of years ago as seeds, allowed to grow and mature in real soil (not plant pots). Our wild heirloom trees have deep root systems, which draw vitamins and minerals from deep withing the soil, resulting in an olive oil rich in polyphenols vitamins and nutrients. Modern trees cannot produce deep root systems.
• Low Density Farming- Our Trees were Planted Far Apart (Never Row Farmed)– Our trees were planted hundreds of years ago far apart. Modern Farming uses the row farming technique whereby trees are planted close together for maximum yield per acre. This is called high density farming/row farming. Row farming leads to depleted soil and low nutrient levels in the resulting olive oil.
• Naturally High in Polyphenols – Our Ancient trees with deep root systems cared for by ancient farming methods, produce olive oil incredibly high in nutrients and polyphenols.
• Dry Irrigation– we use dry irrigation methods- meaning we never water our trees we rely on natural rainfall. Thus our trees have to struggle to survive. This results in higher polyphenol and nutrient content. Modern farmers irrigate their olive trees, to produce bigger fruit and higher yield.
• Ancient Farming Methods- Our heirloom trees are grown without pesticides or herbicides
• Our Farm- Once Country One Source: we never mix our oil from multiple farms or countries, unlike many other brands.
The Bold Truth:
Most of today's olive trees are GMO hybrid trees which bear fruit after 5 years whereas seeds from our Heirloom Olive trees only bore fruit after 8-20 years. For most producers, the economic incentive to harvest quickly overrides the health benefits of using heirloom trees. The new GMO trees do not contain high nutrient levels and do not have the life expectancy of our heirloom trees.
