Unlike many sourdough breads on the market, including other "ancient grain" breads, that incorporate refined wheat flour to aid in rising, our breads are made with 100% stone-ground whole ancient grains: Kamut, Einkorn & Spelt. This dedication to ancient grains ensures that our bread remains true to its roots and free from toxic chemicals.
Why Our Bread Is Different
Our loaves are not puffy or fluffy because we don’t use any additives or glutenous white flour to help the dough rise. Instead, we rely on time-honored techniques that result in a dense, flavorful bread. Some customers might notice that our loaves are smaller and denser compared to commercial breads, but this is a testament to the integrity of our products. The size of our loaves reflects the absence of dough conditioners, such as azodicarbonamide and potassium bromate, and the absence of white flour.
