2 Cups Einkorn Flour

1 Teaspoon Baking Soda

½ Teaspoon Baking Powder

½ Teaspoon Sea Salt

3 Ripe Bananas, Mashed

½ Cup Melted Coconut Oil

¾ Cup Coconut Sugar

2 Flax Eggs

1 Teaspoon Vanilla Extract

Optional Add-Ons: (Chopped Nuts, Dried Fruit etc.)
Directions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
In a large mixing bowl, combine the Einkorn flour, baking soda, baking powder, and salt. Mix well to ensure even distribution of ingredients.
In another bowl, mash the ripe bananas until smooth.
Add melted coconut oil to the mashed bananas, followed by coconut sugar, flax eggs, and vanilla extract. Mix until all the wet ingredients are well combined.
Pour the wet ingredients into the dry ingredients. Use a spatula or wooden spoon to gently fold the ingredients together until just combined. Be careful not to overmix, as this can result in a dense bread.
If you're adding any optional ingredients like nuts or dairy-free chocolate chips, gently fold them into the batter at this stage.
Pour the batter into the prepared loaf pan, spreading it evenly.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove the banana bread from the oven and let it cool in the pan for 10 minutes.
After cooling slightly, transfer the bread to a wire rack to cool completely before slicing. This allows the bread to set properly and makes slicing easier.
Once cooled, slice the Vegan Einkorn & Banana Bread and serve. Enjoy it as is or with your favorite vegan spread or toppings!
