Hybridized Wheat vs. Einkorn
Hybridized wheat has 42 chromosomes compared to einkorn, which only has 14 chromosomes, so its gluten structure is much less complex and, as a result, easier for the body to digest and process.
Einkorn is an unhybridized wheat that has not been genetically manipulated whatsoever. Its DNA structure has been unchanged since it was discovered 12,000 years ago.
When wheat was hybridized, it was designed to have thicker stalks, so it is less prone to breakage and is built to weather harsher conditions. They also cultivated the wheat so that it has a fluffier texture when baked. In order to do that, they bred the seeds to have higher protein structures specifically D-genome glutenins.
As a result, since its protein structure changed significantly it made it harder for our digestive system to break down.

Einkorn also has 30% more protein than typical modern wheat, which helps you feel satiated faster. Einkorn is significantly higher in fiber, which will help with constipation and regulating bowel movements.
Einkorn is also high in trace minerals and vitamins, especially vitamin A and B vitamins.
